The Origins of Fondue
Fondue’s history begins in the Swiss Alps, where, in the 18th century, it was a way to utilize aged cheeses and hard bread during the winter months. The word “fondue” is derived from the French “fondue,” meaning “to melt,” reflecting the essence of the dish. It wasn’t until the mid-20th century that fondue made its way across the Atlantic, becoming a symbol of sophistication and social dining in the United States.
Traditional Swiss Cheese Fondue
A classic mix of Gruyère and Emmental cheeses, white wine, and kirsch, this fondue is the epitome of Swiss tradition. It’s perfect for dipping crusty bread, vegetables, and even apples for a sweet and savoury experience.
Chocolate Fondue
A dessert favourite, chocolate fondue is a simple yet decadent mixture of melted chocolate and cream. It’s versatile, allowing for a variety of dips like fruit, marshmallows, and biscotti.
Fondue Savoyarde
From the Savoie region in France, this variant uses a mix of local cheeses and is often infused with garlic and white wine, offering a rich and comforting taste.
Bourguignonne Fondue
A departure from cheese and chocolate, this fondue involves cooking pieces of beef in hot oil or broth. It’s a carnivore’s delight and is served with an array of dipping sauces.
Fondue Chinoise
Inspired by Chinese hot pot, this fondue features thinly sliced meats and vegetables cooked in a flavourful broth. It’s a lighter option that doesn’t skimp on flavour.
Moitié-Moitié
A creamy blend of half Gruyère and half Fribourg vacherin cheeses, this fondue offers a smooth, flavourful dip that’s perfect for bread and potatoes.
Tomato Fondue
For those seeking a lighter option, tomato fondue blends cheese with tomatoes for a tangy and refreshing dip that pairs well with a variety of vegetables and bread.
Mushroom Fondue
Earthy and rich, mushroom fondue combines the robust flavours of mushrooms with melted cheese, creating a hearty dip that’s perfect for meat and vegetable dippers.
Chocolate and Peanut Butter Fondue
A twist on traditional chocolate fondue, the addition of peanut butter creates a creamy, rich, and utterly irresistible dip that’s perfect for fruits, cakes, and cookies.
Seafood Fondue
Similar to Fondue Chinoise but with a focus on seafood, this fondue offers a light and flavourful way to enjoy shrimp, scallops, and fish, dipped in a savoury broth.
